Ingredients
Salad
- 1 lb Fresh heirloom tomatoes, mixed
- 1 ½ oz Cooked bacon, chopped
- 2 oz Baby arugula
- ½ Avocado
- ½ cup Steak spiced croutons
- 1 whole Blood orange, or cara cara orange
- 4 oz Fresh burrata cheese
- 1 oz Extra virgin olive oil
- TT Salt
- TT Black Pepper
- 2 oz Housemade buttermilk ranch (recipe follows)
Buttermilk Ranch
- 1 gal Mayonnaise
- ½ gal Buttermilk
- ½ cup Shallots
- 3 cups Spinach, chopped
- 2 tbsp. Garlic chopped
- Salt/pepper
Instructions
Salad
- Rough chop tomatoes and avocado, and place in mixing bowl. Drizzle with extra virgin olive oil, season with salt and pepper. Add sprigs of fresh dill.
- Fold in steak spiced croutons and warm, cooked bacon, and fresh blood orange
- On a large plate, place buttermilk dressing down. Lightly place tomato salad atop buttermilk dressing. Garnish with burrata cheese and arugula.
